So, baking kale is an easy variant on more traditional ways of cooking kale… These remind me of the crispiness of flash-fried spinach, but without the frying… Warning — these are totally addictive…
Servings: 1-4 servings, depending how willing you are to share….hah.
1 lb of fresh kale leaves, washed
several Tbsp of olive oil
freshly ground salt and pepper
1. Preheat oven to 350 degrees F.
2. Cut or tear kale chips into smallish pieces… In a large mixing bowl, pour a few Tbsp of olive oil over the kale and toss thoroughly so that each piece of kale has a light coating of olive oil. Spread kale (in a relatively single layer) onto a large cookie sheet and season with freshly ground salt and pepper.
3. Bake for approximately 20 to 25 minutes, until kale is crispy and slightly browned. Turn kale with tongs once or twice during cooking to ensure even crisping :-) Eat immediately (obviously….)
